I would recommend the first thing you do is spend more time reading the posts about what should be the first thing to do, there are many here!!
But seriously, there is a wealth of info here already posted... Your new Rover will take plenty of your time an attention, That starts right here by reading up on what you just did!!

Start simple bluetooth ODB reader that plugs into the ODB port on your Disco, then Torque for Android or a similar app for Iphones and montor you actual engine temps. The dash gauge is functionally an Idiot light.
You have a steel sleeved aluminum engine and engine temps are very critical,overheating will warp heads and compromise head gaskets.
Beyond that fluid changes are usually the 1st thing I do, oil, transfer case, diffs. The transmission should be serviced to my way of thinking but if it shifts without issue I would leave it alone initially.
Check your drive shafts, for play the front one in particular does a lot of damage if it lets go

Welcome. Seems like pretty low miles, thats awesome.
1. Front drive-shat like a tom woods or British parts of Utah since the stock one isn't serviceable and can explode.
2. Scan guage/ ultra gauge to monitor temps. Should be in the 188-200 range. 215+ is danger zone. 230+ is scary.
3. 180 degree stat (pretty easy to change) but will take flushing / re-filling coolant system. Bleeding can be tricky.
3. Check / change fluids. Brake fluid, power steering, coolant and oil are all a 5 second check. Diff fluids, t-case, and transmission are a little more complicated.
4. Full "tune up": MAF, front o2 sensors, spark plugs, wires, coil packs
