Welcome Jimbo. The coolant level is supposed to be even with the top of the "X" thing in the middle of the reservoir, not to the top. The rear view mirror can be used if not plugged in, but it won't have the auto-dim feature working. On the gear shifter housing, do you mean the part with the PRNDL on it ? I'm not much help on that. You should get a service/shop manual if you are planning on doing work on the truck. Haynes does make one, or you can subscribe to Alldata.com on-line for twenty some bucks the first year and a little less for each year after. It's going to be a little rough keeping a Disco up being a student on a tight budget, but good luck, I love my Disco.

Also, if you have to fill the coolant regularly, you might have some real problems on your hands. If your Discovery is in good shape, you shouldn't have to touch the coolant except to flush it every two years.

If your coolant level is dropping you need to find the source of the leak. If these vehicles overheat there is more than a slight risk you might toast the engine. This should be your number one priority. (The good news is most leaks can be fixed for the price of parts)

yeah sort out the coolant thing first off... replacing parts of the center console are pretty easy, just start removing screws and little panels and before long you will have the whole console out and be able to better access what you are trying to fix... the mirror does not need to be plugged in to continue to function as a mirror, you just wont have the auto dim feature, most older discos dont auto dim anymore any way, they just kinda fogged up long ago... i actually clipped the wires to my auto dim mirror and used them as the power souce for my CB radio mounted onto the overhead bin...

If you suspect you have a coolant leak take the truck to a mechanic and have a pressure test done on the cooling system. My mechanic charged me a half hour shop time to perform the test.
