Your temps are what see with a 180 thermostat, I have an issue when hits around 85 - 90 outside and I am going up very steep grades at slow speed my temps run up to around 208. Turning the heat on and dropping an extra gear to 2nd made that largely go away, top of the hill with my clutch fully engaged my temps have dropped to as low as 181 for a couple of minutes or so before returning to normal as I coast along.

Normally I run 188 to 194 around town, 186 to 190 hi way flat 188 to 197 hi way on hills at around 65 mph

Other than the fan and clutch, I don’t see any other concerns here. Is this just a “Rover-ism” til I go inline t-stat and/or e-fan? The current clutch seems fine by the way, stiff to spin.

i have had a similar issue with a/c, regrettably, no satisfactory reason why it happened. A mechanic fixed it, but I did not get to speak to the technician. It still sometimes does get hotter for seemingly no reason with a/c.

177 - 185 on highway

188 around town

190-197 with ac on on highway

201 - 204 with ac on around town

I get low coolant temps with low ambient temperatures. High coolant temps with high ambient temps and high under-hood temps.
New Rad, inline thermostat and AC condensor fan. No water wetter, just Mercedes green/blue coolant.
2001 with 106k on the clock

AC condensor creates extra heat when the AC is running, the efan helps, but it will not stop warmer air to pass thru the transmission cooler, oil cooler, and the radiator.

Same here. When outside temps are above 85-90, my idle, uphill, and 70+ highway can go up to 206-210. Below 85 outside, I never break 204. I always have the ac cranked, so it adds extra heat. I say don't worry unless is gets over 215 and does not go down when moving or revving in neutral.

Same here and I have an entirely new cooling system with e-fan. Only happens above 85 degrees or 70mph and above 80 degrees at the same time.

Just thought I’d post for future readers. The new fan and clutch definitely fixed my issues. I’m not seeing over 204, with 100+ ambient temps and AC blasting. Also my highway temps are down between 183-190.

Im a happy camper.
