Spares, What to save before junking?
I just bought a 2003 Disco with 102K to replace my 1999 Disco with 170K.
I plan to cannibalize my 99 Disco for spares pieces and parts etc.
I've got 2 weeks before it goes to the junk yard.
That means I'll need to pull parts etc before I'll actually need them.
I'd really like suggestions for things I should pull from it before sending it to the junkyard. Any and all suggestions would be much appreciated.

I have the same situation, taking parts from a '99 to put on my '03. I've had it in the driveway for more than a year and I'm still pulling bits. Two weeks isn't going to give you much time.
Most obvious one is the transfer case. I also pulled the oil cooler and several parts that needed replacing such as A/C hard lines. Maybe get some of the door lock actuators. Grab the whole ABS block just as a spare. Maybe harvest the oil pump cover if you're feeling adventurous.
Depending on the audio systems fitted, you might want to grab some of the tweeters -- the high-line ones are a big improvement over the regular ones.
The computers on the '99 don't have any advantages over the ones in the '03. (In fact, the SLABS unit is worse.) There's no differences in the front driveshafts; don't bother with that and instead replace with a greasable aftermarket one. Pulling the headliner is going to be a huge waste of time unless the one in the '99 is in fantastic condition.

I don't know much about the compatibility between the two years you're dealing with but I second the door lock actuators, and may as well get at least the driver's window mechanism. The cowl covering if not already damaged seems like low hanging fruit. Is the MAF the same? Radiator and related cooling system bits?

- Trans (mission?) or Trans(fer case?)
- Headliner (Consider if in fantastic condition)

- Tweeters (Maybe depending on if high end or not)
- Drivers Window Mechanism
- Radiator (if you have the time and in good shape)
- Radiator Cowl Covering (if not already damaged)
- Coolant System Bits - (hoses, clamps, etc)
Transfer case, not transmission. The transfer case on your '99 truck should be lockable, whereas it's almost guaranteed that the one on the '03 truck is not.
I don't think there's much (any?) difference in the transmissions so there's little point in keeping the old one.

Looking at your sig, don't forget that alternator! Both my Discos had rear calipers freeze up within weeks of driving them, granted, each of them sat before I got them so that didn't help. For that matter, I'm pretty cheap and have tons of room so I'd grab all 4 calipers and possibly even rotors depending on the condition of everything. As mollusc points out, parts for these things typically aren't all that expensive however given the current situation with COVID, or needing to make a repair on a Sunday or whatever, I appreciate having any functioning spares on hand. You're short on time and will have to prioritize but cruise control actuator and computer would be on my list, possibly engine harness just to have all those connectors should you ever need to make a splice.
And if it helps, I've done a bunch of door lock actuators in the past couple months. They are not that hard to remove if you follow the procedure. The goal is to get the window frame up and out of the way. A whole bunch of Torx bolts around the perimeter (two different sizes), a couple 10mm bolts inside the door frame, remove the rubber wipers where the glass disappears into the door and the frame lifts right out. Oh, and I removed the side view from the front the other day but I'm not sure that's necessary. From there you pop a few actuator levers off the mechanism and it too slips right out. Shouldn't take more than a half hour for the first one and then 15 minutes for the next ones as you begin to understand how they are assembled.
