Default Stainless Steel Brake Hose

Do replacing the brake hose with a stainless steel hose maing a difference in braking performance?

Yes your rubber break lines are more likly to expand and cause a lot of play in the break and response! the stainless steel hose wont do that help on a long down hill run, my rubber hose will get weak and scare me a little!

No more brake hose balloning hence with all new DOT 4 and stainless steel lines, you will have a firmer brake pedal.

The degree of difference depends on how old your rubber lines are. If they are brand new, not as much as if they are older, when they are swollen more internally.
