Clean up surface cut removing minimum material to get them flat. You can check yourself if you have a good straightedge. Should not be able to get a .003 feeler gauge under the straightedge anywhere.

@Brandon318 We call it truing around here, which is making sure the head in perfectly flat. Unless you heads are badly warped there is minimal material removed, often it is almost just a "polish"

A valve job is also never a bad idea while the heads are off.

Awesome! Dropped them off just now. $390 for cleaning, pressure testing, and potential resurfacing. They're the best machine shop in town. The guy came out to see what I had, and only seeing a small corner of them (they were wrapped in bubble wrap) he was like... "ah, Land Rover? Did it blow a head gasket??" haha, he knew right away.

They're going to pressure test it first to see if it's needed, but yeah, I'm able and willing if it's needed.

Check out the "Cylinder head - overhaul" section of the RAVE workshop manual. There's more than enough info there about the heads and valves. You should definitely have the valves and valve seats inspected and ground/lapped as needed, and the valve guide seals should be replaced. The gasket set you bought should have included the valve guide seals.

You can also review the relevant sections of the 4.0 & 4.6 Litre V8 Engine Overhaul Manual linked below. Again, more than enough info to satisfy you, I expect.

4.0 & 4.6 Litre V8 Engine Overhaul Manual - 4th Edition - Land ...
