What is the best combination for suspension lift?

I would like to do some light off roading but not be limited to that since my wife's family is from Grand Junction, CO and I would like to go down to Moab, UT and do some offroading there. My wife will be driving this car most of the time so I want it to handle good on the road as well as off road. I will in time put some bumpers, snorkle, and roof rack on when I see it fit financially. What do you think?

Definitely take it off road stock, no question there. Taking it out stock will teach you how to really drive and make those various upgrades all the more worth while when you do get them. As for you when you do get a lift, for your purposes I'd definitely say OME 2" lift, get the steering stabilizer as well.

I have owned a 2000 for six years now and done some off roading so I know its limitations and I know how to drive it, I just got a 2004 that I want to make my off roading vehical even though I have my 2000 that I drive everyday. I would just like to know what your suggestions are for suspension and tire sizes so I do not have to do trial and error with thousands of dollars of suspension and tire combinations.
