I ended up just spending the money and getting a new exact fit fan/clutch unit. I was tired of working on it for a while and didnt feel like being creative with the chevy fan option.

03 & 04 are one piece, you can convert it to a 99-02 setup cheaply.

Here are some links for comparisons:

Borg Warner W0133-1622710 Fan Clutch | Frugal Mechanic
AMR W0133-1601580 Fan Clutch | Frugal Mechanic
Eurospare 1023AMZ7271 Fan Clutch | Frugal Mechanic
Eurospare 1023AMZ7270 Fan Blade | Frugal Mechanic

Not sure if these are all accurate, but I like using Frugal Mechanic, and it came back with multiple results.

EDIT: The fan blade appears to be universal???

Looks like the Borg Warner is fan clutch and new fan complete for just over $200 with the 03/04 fan. I have not replaced my fan clutch, so thinking would it be worth it or I guess would it be an worthwhile upgrade to use the 03/04 assembly with the fan with additional blades to assist in keeping the temps in line on the 99-02 model?
