Question 2001 p38 cooling

Ok the Dog was bad again. Ran perfect for 7 days after coming back from the vets (Columbia SC Land Rover) All they did was FIX the locking Problem ($1,000.00) so wife and I are happy. Drove car in AM no Problems (Ultra Gauge 194 to 199 deg) Ambient was 96+ Went in house started car went to 210 deg, normal then would drop down to 194, NOT this time up to 260 deg, shut down then
1. Check oil level (OK)
2. Waited then checked Water level (LOW) since it lost coolant.
3. Topped of with 50/50 premix, started car no pressure cap and let it burp air.
4. Turned off and went home.
5. Started COLD motor and let it idle back up to 245+ shut down. This was in about 10 min or less.
6. Ordered all new hoses, thermostat (was replaced when engine was changed about 1,500 miles before.
Other than what I think (thermostat) any ideas???

i would pressure test the cooling system before i went any farther,
to see where the coolant went.
have you checked your condenser fan it should have come on around 210.

Check pass side of front console. Inside you can see the heater core lines and you can check if they are leaking (oozing) fluid. O-rings get old. As above a pressure test will let you check all fittings for leaks. Look at weep hole under water pump to see if it is leaking too. Check the drains underneath for antifreeze residue.

Will tow out to my shop (trailer) and do some investigating this weekend.
