SETX is certainly what I'd call a bit "hot" so 206F with the AC on in traffic or 80MPH does not seem high to me. I monitored it when I first bought it and on the way to go look at it & buy it my company van overheated almost the entire way there (it's never done that). That's when I saw 206F with the AC on after driving in heavy traffic and 80MPH after that in the LR3.

195F with my ScanGauge
I am up here in the near Arctic so my temperatures run cooler - closer to 195F with the stock 190F thermostat, and yes, there is snow on the ground right now and has been for the last three weeks.
Below is a table of "normal" temperatures relative to the factory temp gauge needle - not exactly a testament to precision and detail.
Needless to say, that is one reason I got my ScanGauge - to find out system voltage and coolant temperature.
Re coolant temperature, it depends where you read it; as such, I wondered where the 215F reading came from.
The ScanGauge temp comes from I presume the engine computer and I suppose it gets it somehow from the coolant temperature sensor but who knows what sort of interface there is with the oil temperature sensor.
There is some sort of sharing of info as apparently the oil temp sensor will if not shut down the engine, then at least red line the temp gauge under certain parameters if it senses the coolant temp sensor is not doing its job.
Unfortunately, the ScanGauge does not seem to separately monitor engine oil temperature, nor tranny temperature either.
Engine Coolant Temperature ºC (ºF)---Needle Pointer Position
Ignition off----------------------------------- Park position
40 (104)--------------------------------------Cold Blue segment
75 - 115 (167 - 239)-------------------------Normal
120 (248)-------------------------------------Start of hot (Red segment)
125 (257)-------------------------------------End of hot
