Temp sensor issue or air bubble or head gaskets!
If it is air, I'd recommend burping the system the next time the temp spikes. For all the bleeding I've done on these they almost never get rid of all the air.
Next time it spikes, pop the hood and unscrew the coolant cap. That will let out any air. Top off the coolant and you're good to go. You may have to burp it a couple times.
You can test the thermostat on your stove. Boil some water and put the thermostat in it, if it's working it will pop open. If not, you need a new one

Just unscrew it slowly, it shouldn't spit coolant at you but that's always a potential on a hot engine.
One more thing to add, sort of a biggie I don't know why I neglected this:
My Climate Control blows cold even when selected fully to hot. Does that indicate an air pocket still or a thermostat?

I changed the thermostat today. Drove it....temp gauge spiked again. I pulled over and opened the expansion tank cap and let air out until coolant bubbled over. Drove it more and I have had no issues since. A couple times I stopped to let more air out and top off the coolant, which seems more stable now. I have put 20 miles on it... victory?

Just give your reservoir a check next time you go to drive it to make sure the level doesnt need 1 last top off.
