Default Transmission Fluid Check Issue

My LR3 has 212k on it, I've had it since 190k, the other day I got a warning that popped up saying the transmission was overheating and to slow down. The warning popped up as I pulled onto my street and the vehicle didnt seem to have much power. I pulled into my driveway and before I could connect my phone to the gap tool the engine cut off. It wasn't a hot day and I was only doing a bit of urban driving around town.
I figured I would check the fluid level since I had a shop change out my ac compressor a couple months ago and I new they messed with the trans cooling lines. The next day I followed the instructions found online, monitored the trans oil temp with my gap tool, got it up to temp while level and idling, moved the shift level through each position pausing at each selection and proceeded to remove the fill plug. When I did a lot of fluid shot out when I was expecting a small trickle or no fluid at all coming out. My thought being maybe the shop didn't top it off if after messing with the cooler lines.
Any ideas or advice would be much appreciated.

To be clear, you removed the plug when it was idling? They could have overfilled it but it would take a lot to cause overheating so how much fluid do you define as a lot? Also you may want to inspect your trans cooler lines. If they damaged/pinched them then maybe you are getting very limited cooling. They run right by the AC compressor and are hell to visually inspect, really gotta get up in there and look. Also the LR3 does include the transfer case and rear diff as being part of the transmission, because it is, and they also have temperature sensors. I would pull codes for sure.

I did remove the fill cap while it was running. The fluid shot out all over the exhaust.
Looking at the cooler lines compared to images online, they have been cut at the joints where they change from rubber to metal and hose clamped back together. I don't see any evidence of leaking at those splices.
I'll check the transfer case and differentials

Those lines can easily reach 100psi, I hope whatever they did was done right.
