Default Lr4 overheating

My LR4 shows that it's overheating but as soon as I turn it off and turn it on but not the engine it shows the temperature in the middle. It can idle for a while without overheating but when I start to drive it starts to overheat very quickly. then sometimes I can drive it for a long time and it does not overheat it'll just say low on coolant. Sometimes the temperature gauge goes up and down which is kind of weird. When it's idling the coolant is at the correct level but when it's overheating the coolant gets sucked all the way down and there's a lot of pressure and when I release the pressure clear liquid comes out not pink. If anybody knows anything about this let me know thanks.

Did/does it have a coolant leak? Have you filled/bled the system?

I've replaced a lot of hoses including heater core hose and no leaks that I could see. I'll keep looking and see what I find. I've had it drained then filled up again don't know if they bled it.
