I live in New England and purchased a 2004 Discovery II SE7 with 190k miles today. This is not a primary vehicle but a project for me to wrench on. I do most of my own maintenace on my other vehicles (for my own enjoyment), and I'm sure the LR will have no shortage of maintenance needs.
What I know it needs- at a minimum ABS shuttle valve (hopefully not a new ABS module), rear frame repair, 4wd shifter/CDL is stuck evap code is on but some prior owner removed the evap and the engine is throwing a code, I wonder if there is a bypass for the evap MIL.
My hope is to get the known issues sorted, do the deferred maintenance (fluids, propshaft, tstat, etc...), then start adding off-road parts, lift, tires, and on from there...
I've already lurked and perused a bunch of info, and I'm pleased to be a part of this community.

Picking it up
Congrats, great color. Everyone needs something to keep their mind off the sh** going down in the world today and a Land Rover is just the ticket. Keep us posted...and don't spend too much money. You'll need it down the road.
