Post L322 5.0 Temperature sensor 2

Hey guys, I got a 2010 Land Rover Range Rover with a 5.0. I did the dreaded timing chain job with very little trouble and everything seems to work out. I've been driving the car for about a month now and just now I had some codes popping up. I had a P2183 and a P0128. A Coolant temperature sensor 2 and a Thermostat (Coolant temperature below thermostat control limit). It's super flaking and will go away for about a day or two after clearing it. It will come right back though. Problem is my scan tool doesn't pick up the 2nd temp sensor on its live data so I can't tell if its actually having an issue from the senor and wiring side.

I decided to replace the sensor. Nothing happened, same issue. I replaced the thermostat when I did the timing chain as well as deep cleaned the condenser and radiator. You don't wanna know how much crap collects in that little gap between them. I am pretty sure the thermostat is not at fault here due to the p0128 always being accompanied by a p2183 but a p2183 not always being accompanied by a p0128. I am going to assume a wiring issue due to its intermittent nature and not a grounding issue due to only one sensor being affected. Does anyone know how to see the coolant temp sensor 2s output besides just back probing it? I want to see what the ECU is seeing.

Any help or if anyone has ran into this issue please let me know, Thank you!
