Where I live (Australia) there is really only Pirelli and Goodyear that sell a 55 or 60 side profile all terrain.
I was advised to order the 20" wheels as there are many more manufacturers that make all terrains which will fit (in different profiles and widths)
Haven't taken delivery yet but seems like good advice from speaking to a few other people.

The guidance is the same in North America, as well. Avoid 19" if you desire a satisfying quantity of choice in tire types (off-road) and manufacturers. It has been thus for years on other Land Rover vehicles, as well. JLR continues to specify the 19" without providing a heads-up to buyers regarding availability -- not sure why.

My dealer told me there is a date before the car goes into build where it is "spec changeable" but this refers to major things such as the engine, the electronics packages etc. After this date you can't change major things with the car
As far as I know, you can still change things like wheels and some trim patterns after you have been given a build date.
