Defender stalled while driving today, won’t stay on for more than a few seconds
Car was driving fine all day and as I was smoothly accelerating into freeway hit about 45-50mph and the engine cut off and stalled. I message popped up on dashboard something about still drivable but proceed with caution even though the gas pedal was unresponsive. Car can turn back on for about 5 seconds then dies again. Had it towed to a shop but logistically it won’t be open to see them until Tuesday.

would a turbo dying inhibit all function of the car? To the point of turning off after a few seconds? I’m clueless with the newer cars and technology. I blew up my turbos in my twin turbo 300zx 20 years ago and it just smoked a lot.
I also just got the 60k service done recently too, so it’s fresh in maintenance requirements.

Not a Turbo issue, that would not cause it to shut down after 5 seconds.
Any check engine lights on the dash? Without a scanner it'll be tough to know what's up. Good case for owning a GAP tool.

My REMOTE app just updated and says "engine management system malfunction" and "seek qualified assistance" "engine malfunction" but at the time the check engine light wasnt on - its been towed to a mechanic who is closed until Tuesday though.
My turbo did die and did not experience these symptoms. First there was a whine, then a ton of CELs and codes, then it went into limp mode and I was able to drive at 50mph 200 miles home. Not much fun on a NE highway, but way better than sitting on the shoulder for 4 hours waiting for a flatbed truck to take me to a dealer 3 hours from home.
I would say your symptoms sound like bad gas, low fuel pressure due to a failed fuel pump (did you run out of gas or run the tank very low recently?), or an electrical issue like a loose spark plug wire.

Now, in the initial message you said "smoothly", but throttle hose popping off sounds very much like there was a lot of boost and "throttle hose" is the duct between the intercooler and throttle body. Is that right? Were you accelerating smoothly, or, how do I say it, energetically? 
I had the same exact problem in one of my other vehicles, and I do admit, I pressed it to the metal during post-repair run (who designs cars in a way that requires to take off the intercooler to drain coolant? dumb, dumb, dumb). My own fault, should've given those clamps more torque. But if your vehicle was serviced shortly before your incident, I'd be talking to those having those repairs done.

I think the culprit was the mechanic who did my 60k service probably didn’t reinstall it right when they cleaned that area - they cleaned the throttle hoses just about 5k miles ago. So I’m thinking it wasn’t put back on properly.
