So I have a streak of blue on the left side of the driver’s seat. Not the worst thing in the world.

Oh - I don’t mind the manual fore and aft (much faster adjustment than electric), and I don’t have any creaking or clicking when weight shifts (as someone reported above). Other than the blue stain, no issues at all.
I am actually very glad that my Defender came with the acorn color leatherette stuff. It seems very durable against stain & use, while still having a premium feel & look.

I think the additional 2 ways might be the side bolster support, on the 14 ways you can "squeeze" and "unsqueezed" the 2 side bolsters in and out, to adjust for body size and / or grip better in turns or offroad. Might be wrong about that but I test drove a Defender that had more basic seats and I remember this wasn't included.
Can confirm that 14-way does not have any power in headrests. The power bolster "squeeze" is nice and I mess with it all the time.

I don't know about the standard leather, but our 3 year old 110 HSE with Windsor leather is not only comfortable, It still smells like leather when we get in thee car. Some cars lose that new car smell, but I like the smell of leather and it hasn't faded.

I am only here to comment on cooled seats. I have them in my duramax and am saddened to not have them in the Defender. But that feature was not worth $2400. Though awesome in the summer.

I second the comment above about the Windsor leather staying fresh and keeping the leather scent even after 3 years. I have the same experience and from the looks of other LRs with Windsor leather it seems to age much better than other cars.
On the cooling seats comment. Oh yeah! This must be one of the best features and the Defender has one of the best cooling seats I have ever experienced. When you set to level 3, it is like you have your own private arctic-butt-cooling blower. Especially useful during this hell-on-earth period we are living in the South.

FWIW, I’ve got the Windsor leather but while test driving, we tried multiple defenders in different non-Windsor leather colours.. the Windsor leather is much nicer/softer. And personally, I’d pay the extra just for the leather on the dash/door panels instead of the neoprene material

My 110X has rear seat cooling too. A first in my books.

Sadly, the rear seats are only heated on appropriately equipped Defender models. The dials do look similar to the front but you only get the option for heat when you turn the rear dials.
