Heated Seat and Steering Wheel Question
Interesting info @MacDuff . On that, with the GM set up the heated seats trigger on at the medium setting. I wonder if that is to prevent any sort of overheating to someone or something sitting on a seat. Regardless, if it was such a huge safety concern I doubt GM would be cranking those vehicles equipped with it by the hundreds of thousands.

Both of my Ram trucks have this, my Alfa (hardly a pinnacle of electrical engineering!) has it, my C8 (GM) has it, my Bmw's had it, darn near everyone else seems to have it.
The list is a mile long of manufacturers that seem to have mastered turning on a seat heater...lol.
It was a very significant reason I walked away from the brand and traded it for the Passport which btw does it all correctly and automatically with simply a start from the fob, heated seats come on along with the heated portion of the windshield and steering wheel. Believe it or not I have no fear of getting injured by this behavior. 
These are the people who designed your JLR vehicle (brain-dead clearly)... on the plus side they use nice materials in their vehicles, are very capable off road plus they get great style points at least from me on their exteriors but extremely low marks for these details are what ruined it for me especially when it was piled on top of the other reliability issues I had with mine. Depending upon where you live I'm sure these heated bits seem like griping about nothing but this stuff up north is a total deal-breaker for some of us. Audi is pretty bad too, I traded the Q5 for the Defender in the first place because Audi didn't even have remote start at all and I was leasing the Q5 so no mods are allowed. It's too bad JLR chooses to ignore customer suggestions on this issue and ignore their competitors. The only way to go if it's important to you is not to buy from them anymore imo, support some other brand for now and hope it changes someday. We all like JLR out here but they need to do better.

Hell I’ll even take the car remembering the last setting I used!! It’s so annoying that I turn on the heated seats and heated steering wheel everytime I get into the car. This is even after the car being off/locked for about 20 mins.
now I’m wondering if there is a workaround using the GAP tool to have the car remember the last settings so when you do a remote start, those settings would automatically be on

Remote Start and Heating: My biggest pet peeve is I cannot turn on the heated WINDSCREEN remotely so it can defrost. While setting the internal temp high enough helps with that it would certainly be more convenient if I could use the function I paid for remotely. Adding check boxes for what I'd like: windscreen - heated seats - heated steering would all be welcome additions.
As for cooling on remote start: I have used that a few times and it is a welcome addition in Colorado summers but typically forget to use it for some weird reason. I definitely remember to use it in places like Kansas City (Missouri or Kansas) where I love the remote cooling even more than remote heating in CO winters.

I’ve been talking about this and asking questions in other forums on this site. It seems to me as if the gap IID tool is what we need to activate the features that the rest of the world has with their remote apps. There’s a forum that I found the other day that lists a whole process on making changes within the tool. I don’t know how to insert it here but just search for Gap IID tool. The guy from Powerfuluk.com in England has some videos on the tool too.

If so, that would be good news, I would think that with the GAP tool, we might find a solution.
as far as I know, you can’t activate these features to the remote using a GAP tool.
@Huc Settings --> Apps --> Climate turn Auto R and Auto F on
In my case:
Pivi > Apps > Climate Auto R and F were OFF
I've enabled Auto Front to ON and will test on our next cold and frosty day when I'm parked outside
