Get a 180F until you resolve your cooling issue, which is what I run year round. But a 195 will provide more winter heat. Also buy several gaskets. Spring end goes inside block (you knew that but a noob reading this five years from now might not), and if the model you get has a 1/8 hole in the flange, or a little jiggle device, that goes at 12:00 position to let bubbles keep from being trapped behind the stat.
A D1 that has never had a radiator replaced ($$$) would be expected to have buildup of calcium inside, this can be rodded out by an indy rad shop for not much if you carry it in. You might also have mud/trash in rad or condenser fins, or stuck between them. And check the viscous fan clutch to be sure when warm it does not spin freely when released (should go less than a revolution when spun and released).
