Sounds like once you do the the thermostat you will be ready for the chili dogs at the Varisty and a frosty orange. Plus two dogs walkin' and a bag o' rags. (two to go and some onion rings).

There is nothing wrong with running around 200*F.
I run a 195*F t-stat and I run high 190's to ~200.
Make sure your fan belt is routed correctly, it can be routed wrong but look correct.
If it is routed wrong your water pump and fan will turn to slow and can even turn backwards.

I don't know why but it scares me to see it occasionally go to 212 degrees under load on highway. When I back off accelerator, it comes back down. Will check belt but it has been at a well known land rover shop last week to put on the fan clutch. I figured they would of said something?? I'll look it up in the tech help anyway.

It is so easy to put the belt on wrong Rover techs have done it, it will look right, but it will be wrong.
Takes you 2min to check.
They wont be looking at the belt anyway.
Dont let the fear mongering that goes on about engine temps scare you, my truck spikes around 215* every day on the highway just as the t-stat is opening up.
Engines dont like to be ran cold, you need to keep them in their "sweet spot", 190-210 is the typical sweet spot for a engine to run.
You could replace everything cooling system related part and YOUR truck could still run at 212 under heavy load.
