You'd have to be pretty rough to activate them. I've hit some big bumps, even been airborne on all four and not set them off. I've set off the hazards a few times, but never the airbags. I figure if I ever set them off, I will probably be glad I did.
I have had success unplugging them, like when I removed the steering wheel to replace the spiral coil. Nothing scary happened, and everything was fine when I plugged it back in.

When selling my LR3, the guy test driving it hit a deer and who knows what else. The impact was hard enough that it activated the seatbelt tensioner on the driver's side, but it didn't set of the airbag. I think you have to hit something pretty hard to set off an airbag in a Land Rover. Now, in the LR3, I'm a little more worried about rolling the thing a little too far to the side and causing all of the side curtain airbags to pop. I'd be happy for them to go off in a high speed roll over on the highway, but it's just an added cost if it happened in a nice, slow, flop on a trail.
