Congrats on the purchase! I did the same thing about a month ago. Mine had a cracked crankshaft, so I decided to recycle the heads and just buy a used short block. I am in the process of putting it all together now. Here is what I am replacing in the process:

All the gaskets and seals
Head Bolts
Machined and cleaned the heads
Replaced connecting rod bearings
Replaced crankshaft main bearings
Thermostat
All filters and fluids
Inspected everything by the book!

I spent a little over $500 at British Atlantic, $200 for the enigne and $70 at Carquest for the heads. Just take your time and follow the manual, and you should be fine. It is also a good idea to use ziplock bags to keep all your parts in so you can label them and put everything back where it belongs.
