My build is nearing completion
My wife found me this morning on the porch with a cup of coffee staring at my Disco. She asked me what I planned on doing to it this weekend, and I had to tell her I couldn't think of a thing... so here it is.
In the past year, I have replaced/installed with new parts; LR exhaust, both seat switches/cover plates/***** (all LR), LR front lower bumper fascia & bumper trim, LR brush guard, LR brush guard plinth, LR Safari 5000 fog lights, LR mud flaps, LR VSS, LR Fuel temp sensor, Magnacore 8mm wires, Champion plugs, Alternator, water pump, viscous, fan, Nissans radiator, valve cover gaskets (new rubber style), Brit Parts rear light guards, Surco ladder, all new tie rod ends, orange poly bushings, Rubber sway bar bushings, 2" Terrafirma springs, 2+ Terrafirma all-terrain shocks, Terrafirma steering stabilizer, (4) Hella FF300 lights, and LR rubber floor mats, cruise control ECU. I also sourced & installed some used parts; Hannibal roof rack, front seats, speedo binnacle, burl wood trim, rear cargo cover, and other bits & pieces. Down to having the tires installed this week, well until something breaks

Looks good. What did you do for the wood trim? Did you find a replacement for the wood center console piece?
If you're looking for ideas for more therapy, you can always polish it. Remove surface contaminants with clay and then mask the rubber and plastic trim, and wet sand with a flexible backing block 2500, and 3000 grit, avoiding any edges. Then compound with Meguiar's M105 on microfiber with orbital or dual-action. You'll get better results than with a rotary and the old-school compounds. Follow up with M205 and finally wax or polymer.
Other detailing things I've found very pleasing lately include Sonax Full Effect wheel cleaner, and Einszett rubber protectant.
Although the things I've suggested are somewhat costly for what they are, they're good and they're a lot less expensive than a typical LR part's replacement project. Besides that, after experimenting on the Rover you can use them to good effect on your wife's car and bless her.
