Default Random stalling (almost)

so every now and then I will be a a stop light or stop sign and my truck will be idling perfectly. Then when I press the accelerator to go it will choke out and almost stall out. It will do this a couple of time then run fine for weeks, and then it will do it again. Any ideas?

Things I'd check first... IACV, fuel filter, air filter. Those are the easiest and cheapest. Plugs and wires are always a good thing to keep up with as well. If those relatively easy things don't solve the issue I'd dig deeper.

Start with removing the IAC Valve (Stepper Motor) and cleaning the Pintle Tip, and also the female cup end where it seats with some throttle body cleaner. Go easy removing the valve so you don't kill the gasket, and/or have a gasket (ERR3359) on hand ready to go.
If the IACV is old most likely it's time to replace it, but clean it first and see if things improve.

I did a complete engine rebuild about 3000 miles ago. At that time I replaced all plugs, wires, coil pack, air filter, injectors and fuel filter. Every thing on the intake/ plenum was taken apart and cleaned. I will check the stepper valve for any build up.

if everything mentioned above checks out, I would suggest you go back in and check the intake manifold bolts, if they are slightly loose , that may be a source of a vac leak.....speaking from experience

It also might simply be that the IACV is dying. Happened to me.

Well I did a smoke test and did not find any leaks in the system. I have recived my new IAC valve and a new gasket. The new valve came with an o-ring should I be using that too, or just the gasket?

Don't use the O-ring. the tabs will eventually bend as the valve base does not sit flat on the throttle body. Use the flat gasket and it will last.

Is the AC on when it stalls and does it run perfect when AC is off?

mine is doing this. I noticed voltage dips into the 12s when its ready to stall so Im suspecting a condenser fan on its way out

No I very rarely use my ac. My voltage will drop a little due to the very low idle/ stall condition because the alternator is below the required rpm's.
