To skim or not to skim the heads?
disco96sd, not sure of your meaning (I suspect sarcasm which doesn't always come through clearly on forums). In order to keep the thread useful I'll comment individually....
skim the crap out of them - flat heads are the foundation. They don't get flatter
replace the valves/ guides - a valve job is worth doing while the heads are off
lifters - no. Unless you have a specific reason DO NOT REPLACE YOUR LIFTERS. I've read too many threads about the poor quality of new lifters these days
cam - unless overly worn, no need to change cam.
rocker arms - no
rockers - no
push rods - no
water pump - only if you have a reason
oil pump - only if you have a reason
all the gaskets - yes
hoses - yes
boil the radiator - only if you have a reason

We can have different opinions. Its all good.
The difference between our opinions likely pivots around the maintenance performed over the life of the engine (known and unknown). Mine was in great shape because I've owned it since new and I change my oil every 3,000 miles and service/replace things like the water pump and radiator when needed. Wear on the cam, lifters, pushrods, rockers is directly related to the maintenance schedule. If there is a observable reason, sure, replace them, but quality parts can be difficult to source.

Yes skim the heads, appears already done. Skip the ARP head studs. The head bolts are stretched as to maintain tq during expansion and cooling. The studs will not and can damage the threads and work loose. They are better suited for Steel parts or applications requiring the added strength and routine tq checks.
You may need to shim the rocker shaft depending on how much is taken off the heads.
If the stock cam and lifters are in good shape, keep them. Too much of a gamble on new aftermarket crap.
You can do a quick valve job at home. I pulled my valves, cleaned them up, checked the guides, installed new seals, and lapped them in the head. Unless you find a problem there is no need to replace them or cut new seats.
