Yes, you will need to remove both of them though otherwise your truck will run like crap because the back pressure on one side will be higher than the other.
And your check engine light will be on all the time after you remove the cats but it will not hurt anything.
And yeah, you will need to pay cash with no receipt at a local no name muffler shop to have them removed, it is illegal to remove them and the shop can loose his license.

No CEL... I "lost" my cats about 6 mo's ago and no light. The 14CUX dunna care 'bout the cats...

Thank you, I stand corrected.
I forgot that he has a '95, so yeah, no check engine light kido.
