Default ARB Air Lockers on non CDL 2001 Disco II?

Would you recommend installing the ARB Air Diff Locks? and if yes, on the front or rear if only installing one?

If only doing one do the rear, but I'd invest in CDL before a locker. The locker won't do you any good if one wheel on the opposing axle loses traction and you don't have CDL.

Wow! I didn't realize that. Thanks Alex, I thought if I air-locked the back, what was happening in the front didn't really matter....Can you expand a little on this?

Without the centre diff locked, power will simply go to the axle with least resistance -- at least until traction control takes over and starts applying braking. Which may not be what you want to rely on.
A locked centre diff will send power to both front and rear axles equally, regardless of slip.
