Default Coolant Temps Rise Going Uphills

So I just installed the UltraGauge, temps are between 180-190 around town and idling. I have a pretty steep hill, about a mile and a half long, to get to my house. Speeds are roughly 35mph at a constant 3-3.5k rpms. The temps rose up to about 220. The temps quickly come back down to the 200 range after about 30 seconds of normal driving on flat roads.

I have a thermostat in the mail and a coolant flush on the agenda for the weekend. Was just curious if this was normal for these trucks or if there is something else I should look at.

Is installing an electric puller fan instead of the clutch fan on the engine a better idea also?
