Default Disco II Water Pump

A few crazy weeks. Wk-end 1, replaced alternator. Next wk-end, the heater core leaked. Pulling that out was nuts (I have the new one. The hoses are bypassed temporarily while I've been working on next project). Then the water pump leaked.

8 of 9 water pump bolts came out with no issues and only minimal effort with a socket wrench. Then #9. Right side. It's one of the long bolts above the bolt hole that is the coolant weep hole. The bolt head popped off w/o much effort. The smooth portion of bolt, about 1/2" is exposed. I have not been able to get it to budge with different tools and help from others with stronger hands.

I understand that to pull off the front cover is a huge job and beyond my abilities.

Question #1: Can I leave the stumpy bolt as-is? I'll use the new gasket, add a layer of gasket sealant too. 8 of 9 bolts (all new) will be replaced. I spoke with two mechanics locally, one of whom I've trusted as he has worked on our snow plows at work and has always seemed knowledgable and reasonable. He said that assuming I do a good job with the silicone seal I should be ok. This seems risky, but I'm faced with a much bigger job to properly remove the bolt. (Pic attached).
- FYI I've used different types of sockets to clamp down on this, vice grips, tons of PB Blaster (and others), light hammer tapping, NO heat, and my neighbor who is strong as hell. We think the bolt threads are seized deep inside.

Question#2: Coolant - once the pump is on, I'm also replacing the thermostat, belt, and have already replaced the throttle body heater. I intend to flush the remaining coolant out. How long can I run the engine with strictly water without adding anti-freeze, assuming no freezing temps. I will add the anti-freeze/dex cool, but want to test for leaks, drive it a little, etc. while I'm in the middle of this, before adding anti-freeze only to drain it all out.

2001 Disco SEII
Recently replaced alternator, plugs & wires, starter motor.
Working on water pump, along with new thermostat, throttle body heater, and belt while I have it all apart.
Removed heater core. Bypassed for now, will install new one soon.
Brakes next.
