Guys, anyone has experience building an hydraulic winch? Are there any plans, how to`s, instructions?

Unless your time is worth nothing, you'd be better off finding one on ebay or craigslist.

Why a hydraulic winch instead of an electric?

Probably because hydraulic is 100% duty cycle.
