Engine oil temp vs coolant temp
I will be installing a Glowshift dual gauge (oil pressure and water temp). I already have an oil filter sandwich piece and will be installing the oil pressure sensor on it.
My question is, should I install the temp sending unit to the sandwich (for oil temp) as well , or attach the temp sender to an inline coolant hose unit?
Which makes more sense?

If I’m understanding the question correctly you definitely want to install the temperature sender in the coolant hose and not the oil filter sandwich, otherwise you’ll be monitoring oil temperature. Oil and coolant will change temperature and very different rates (the oil will “lag behind” the coolant) and you will want to have the most accurate reading for your coolant temperature. If it’s not too late you may want to consider just having an oil pressure gauge and using a scan gauge/ultra gauge to monitor coolant temperature in addition to all of the other capability those OBD readers have.

I have an oil temp gauge. It makes absolutely sense if you drive in the mountains in summer. Coolant temp tells half the story only. When you drive under full load oil temps can be 15-25C (30-50F) higher (depends if you have an oil cooler or not) than coolant temps. I slow down in order to keep the oil temps below a certain limit. There is no need to install a coolant sensor, since you can read out the coolant temp over the ODB port.
EDIT: An oil temp sensor is also useful in winter. Oil tends to heat up much more slowly than coolant. I check for sufficient oil temp before I let the engine rev over 2000rpm.
