Default Engine shut of at thermostat open??

Just installed the "extinct inline thermostat" w/ 170° thermostat
refill and all good , running engine, taking notes ...
2000 disco 2 ,gas v8
@ 19min20sec - from start
Engine temp 182 ( analog smith's gauge)
". ". Normal ( factory idiot gauge)
Oil pressure 18
Warm air blowing in passenger comp.
engine rpm at idle

Then it just shuts off like I turned the key..
No restart , turns over but no pop. Like fuel or spark is gone..
Let it cool , it will restart and run normal once it sits for many hrs , due to work schedule this time has changed but not less than 12 hrs. I have repeated this 3 times, time changes , oil pressure changes , only constant is temp at which it shuts off ,

Any idea on what I should be looking at ?

Thanks and regards , Roy

Run up @ 1500 rpm then reduced to idle

Sounds like the Crank Position Sensor. When they fail, they often cause the truck to shut off when warm and will restart once it cools down. Not an expensive part and a fairly easy fix.

You can test CPS by pouring a large cup of water Down the back of the engine between the firewall and the drivers side valve cover.

Curious, what's this testing? Just cooling it off to see if it allows the motor to restart?

Exactly that. Heat causes it to fail.

With your dash coolant sensor pegged I wonder what the factory coolant sensor is reading with an OBD2 scanner. I found many replacment sensors to read wrong temps out of the box, be careful with replacments. Also what codes are you getting with the SES light on?
