Looks great! $100 sounds like a good deal for reupholstering the headliner. Did you follow a DIY that helped you with removing the panels and trim in order to pull the headliner?
Just applied the same product to the doors in my Prius and am really pleased with the result. . I also used to seal up most of the edges on my doors. You can cut the tape lengthwise to really make it last!
By the way, with sound deadening you don't need to cover 100% of the surface areas to get a good result. Just the major patches.

I've used the exact same Noico and only applied it by itself, but in reality, a high density foam "sound deadening" material should be placed on top of it for best results.

It helps a little bit in summer, but not much. I lined my roof with stuff mainly for insulation in winter. Most heat gets through the windows anyway, if you don't cover them, it doesn't make a big difference. I have covers for all windows because I sleep in the car in winter. This plus the roof insulation keeps me warm without a heater in a good sleeping bag (I experienced 10 deg. F outside recently in the morning).
One note about that foam with reflective foil on top: It doesn't improve insulation if you glue it onto a surface and cover it with other stuff. It needs a few inches of air in between the reflective foil and a heat source in order to work as a heat barrier. The reflective foil reflects heat radiation back to where it came from when there is an air gap. Otherwise it just works as a heat conductor. Using this kind of material makes more sense if you glue it on top of the head liner.
