The oem stat starts to open at 180 and gets fully open at 205. So if you are running above that, on the highway, the stat is fully open, and the radiator can't keep up with it. You would find better operation in the 190's. A new 180 stat is a good first step. Testing radiator is another. When warm up, and truck off, check fins for temp top to bottom. If bottom is 10F or more colder, then radiator is partially blocked. The aluminum and plastic radiator is too wimpy for rod out by a shop. $150 and up for a new one.
If you are running cooler on the highway, and a lot hotter at Sonic, check you electric condenser fan. It should come on a 212F. If not running there is a fuse and relay in the underhood fuse box. If the blades don't turn free it may have siezed and blown the fuse.
Also check the viscous fan clutch, when warmed up give the fan a spin, it should coast to a stop in less than 1 revolution. If it freewheels the fluid inside is gone and you need a nerw clutch for cooling at idle.
As for a manual, the standard is the RAVE, the factory set of shop, owner, electrical, overhaul, and body shop manuals. Free download below. Don't go print it, the shop manual is over 1500 pages alone.
Is there an exact question that you feel you need a better answer on?
