How warm is not too warm??
I bought my 2003 disco two months back, and mine runs pretty hot as well. I noticed also that I could not touch the hoses without leaving some skin behind!The temps here in KY have been in the 90 - 100 range, hot enough that the ac does not work all that great even on cabin air recycle. It vibrates alot and I have to take DiscoMike's advice at some point and clean out the squirrel cage.
My radiator has the classic leak, and I just ordered a new one I found on ebay for 350 bucks. While I'm at it, I'm changing out the t-stat and water pump just to get it done, since I'm also changing out the serpentine to finish out the 60k services (as well as plugs, wires, intake manifold gasket). I don't expect the temp to drop much at all, I just want to avoid future problems.
As far as oil seepage, have you checked around the valve cover gaskets? Mine was leaking in that area, I cleaned it off to confirm and I found new oil there after driving around. I tightened the cover bolts just a hair and it put a stop to the leaks for now, but I figure not much longer and I will need new gaskets. I will probably change those out when I pull the intake manifold.

The one pitfall in putting in a non-stock rad is overcooling not undercooling, as mike said it will cause performance problems. The proper fix (and there is disagreement on this) is to remove the viscous fan and put in a twin electric fan Kenlowe kit. Then even if your rad is oversized the fans will only come on when needed. This is more important in very cool climates where you can end up running in rich mode for a long time as the engine tries to heat up to operating temperature. This is why you see people (and trucks) blocking off some of their rad in the winter.
Well, I'm pretty sure that the copper rad is goona be much better at cooling than the stock rad, however, I doubt very much that it will be to the point of cooling too much and cause the engine to run rich. Especially if I leave thesame thermostat in.
