largest tire

I've got 255/85R16. They are about 33" I'm not sure you can go much bigger without trimming stuff. Some people run 285/75R16, which is also about 33, but it's quite a bit wider, and may not fit quite as easily. I like that way Land Rovers look with skinnier tires anyway... my defender has 7.50R16, almost like pizza cutters. There is some evidence that skinnier tires are actually better off road, in certain situations, too.

Stock suspension? didnt see anything listed in your signature
I put in 2" HD OME and 285/75/16 will fit with the smallest amount of trimming (been meaning to take a picture of where i had to cut some off) ...the plastic sill/"slider" has to be cut on the inside of the wheel well, ~1" triangular piece that cant be noticed and a 1/2" triangular piece off the front side (bumper bottom)...also not noticeable
I however wouldnt recommend the 285/75/16 if you dont plan on lifting any to the 3" mark or higher...i have plans for going up another 1" or 2" down the road, otherwise the tires just look a little too "stuffed"
What brand of tires are you looking at? Treadwright now offers bead to bead re-treads which seem too look pretty good (yet to hear reviews), some people steer away because of the re-tread look and this seems to address that. Heck of a lot cheaper... but then again if i didnt wheel and was cruising around on the highway with a truck full of kids i probably would buy some name brand just for the piece of mind...
We need to start a thread/sticking with different size tires on different lifts (w/pictures and what it took).
Gregor...bet the ride will be noticeably better on the 16s compared to the 20s.

I have the terra 3" and 285 guard dogs. A quick cut with the dremmel and tehy are fine, but you have to walk out the bump stops for the steering to keep them from rubbing on full turn. they are heavy and will kill your gas miliage by about 1.5-2mpg and you will be doggedly slow haha but they are great for clearane for water/snow/rocks... you can roll over just about anything, and they handly mud and snow like it was superglue. they are tall heavy but skinny (relative) so you get great traction, you just have to be carefull and remember that they are tall from the rim cornering and will tend to follow ruts in the trail rather then flow overthem like wide tires might, its all on what line you pick mostly though anyway.
