My advice: Don't do the headliner yourself if you're at all picky about appearances. I've tried (on many cars). Sad results lol. There's always one area you don't get right and then... lol. This is the type of job that the first one looks so-so, and maybe by your 5th headliner fabric replacement, you finally get it decent.
Here's the sunroof procedure. I just did both of mine this summer here in Portland. If you need a shop to do it, Green Oval up in SE Portland knows the sunroof-fix well apparently from what other local enthusiasts have told me!`
Thank you all for your responses! Surely a common issue, haha. I’m going to work on getting the headliner out first, and might have a local shop deal with the leaks. (Rose City Sunroof) for PNW USA’ers.
Hi again , as I removed the screws from the head liner I took a photo on my phone of every position of the screw with the screw in the shot working down one side of the headliner, , I worked rear to front to removed all the trim first, then started front to rear on the head liner itself and allowed the headliner to sit in the seat head rests, the last two screws above the back door then lifted turned it on its side a bit to get it out through the back door, I did it on my own , but it would be easier if you had some to help manoeuvre it out, it was only after I had completed mine I read on a post that some one had folded the new head liner material back over a broom stick and it had worked well when gluing it down it from the centre to the front, the fold it back over the broom handle and work it from centre to the rear, as for results as this was the first time I did it, I will let you decide

I restored my ‘04 last year and took a chance on the painted headliner. Sooo glad I did! Once you remove it from your truck, clean all the old fabric and adhesive. Primer it, two coats of paint and it’ll look great. See my posts from last year if you want some pics. Took one of the visors into Home Depot and they did a great job of matching the color. Everyone who sees it thinks it’s factory.
Yes it does look good, I did not have that option as there was a bit of damage that I could not hide with just paint, so I repaired it then recovered it

After sealing, I took the time to make sure it was good - pour water/drive through a carwash/leave it out in the rain - before I reinstalled the headliner.
This is great advice. I'm also looking to do this repair and I would've totally overlooked this step.
You are a life saver posting these videos. Been looking to redo my headliner (might just opt for spray painting it or taking it to a shop to apply fabric... lol).
