Moved Handbrake
So I was tired of my leg hitting the handbrake and while working on the CDL I noticed that the setup could easily be flipped. It is a simple process.
1. Remove center console
2. Remove hand brake
3. Unplug all connectors to Transmission ECU
4. Reroute harness to RH side of console
5. Reroute e-brake cable to right side (easy to do from under vehicle)
6. Reconnect connectors to Transmission ECU
7. Install hand brake
8. Install center console
Sorry did not take pictures while doing this. But it is really simple and once you have the console out you will see. If your not 6'5" and 300lbs, then you might not even care. But when driving all day in this like I do, I really get tired of the e-brake handle jamming me in my thigh.

Well done.
If you move the cluster, steering wheel and pedals then I think you are ready for the UK.
Actually, there may be MORE ROOM on the right side as this Discovery was probably designed to be at home in Britain.
But, hard to say without measuring it all out.

Great little mod!
In this case it was for an oversize Man!
I believe you are dead right Savannah. The body shells and many parts appear to be 'universal' and can be configured later for RHD or LHD. It appears very few parts are specific orientation.
Transfer box offset to one side? This is why there are usually different spring rates left/right
