Electric fan is not supplying enough cooling to handle cool down of engine just run at highway speed. When driving on highway, then stopping, engine still has thermal lag time to cool off. If electric fan thermostat can be adjusted, that may help. May be spacing of fan from radiator, cowling, fan blade location with respect to cowl. And I bet those codes are telling you the truth. What temperature does your scanner tell you the coolant is when driving, idling, driving in town, etc? If you are defining overheat by a top of the gauge reading, you can be doing serious damage to the engine, need to stop driving until fixed.

well i found a coolant leak on the throttle body, so i guess that's how it was losing the coolant and overheating, plus it was socking air on the side of the intake that was why it was misfiring, so tomorrow anyway im replacing the cats too, and i adjust the thermostat for the fan, the fan cover the hold radiator and it moves a lot of air, i think more than the original fan.
