Power steering suddenly quits, then starts again?

I tried ordinary PS fluid and it didn't work well. It can be used for flushing (empty reservoir & refill multiple times) though.

Happening when letting off the gas could it be the belt slipping on the pulley? Or the pulley slipping on the pump?

Yes that's a good thought. The belt looks pretty worn, with some cracks in it.

I think I'll change the best and renew the fluid and go from there.

It's not leaking from the PS system, so...

Might check the tensioner pulley too. Could be the belt/pulley combo causes a brief slip when engine speed abruptly changes under load.

Yeah +1 on the pentosin. I just replaced my steering box for the second time. Also you may want to take a look at the power steering flush and fill sticky which can do wonders for your system.

Another thing to check is the U-joints on the steering shaft. They can stick or seize up every now and than if not lubed up and free
