Is there any form of adjustment to the amount that the manual sunroof closes??

My rear sunroof appears to not close completely and consequently allows water to enter at the back.

It would appear as if it should just close down a bit further/tighter.

Check the stripping around the edges. They may be worn, not allowing a tight seal.
