Default Maintenance Help in 2000 Disco II

ok, so I just got my first LR DISCO II, I love her and am ready to see what she's made of, but first I am having a few things done to it. Having the valve cover gaskets replaced, spark plugs, wires, and the serp. belt. I really want to do some of the work myself and was going through the owners manual and noticed that at 90k miles she needs several more things. Can someone please instruct me on how to:
1. lubricate the u-joints and drive shaft
2. change the gearbox oil
3. change the front and rear axle oil
4. anything else I should do at this point?
5. any recommendations on mechanic books?
6. anyone know of a good place to take her four wheeling in the San Antonio, TX area?

Thank you for getting back with me as quickly as you did. I tried to
locate the fluid info. you referred to, with no luck. I can be reached at
210.618.4677. As I stated in my original message I am currently having
some things done. The valve cover gaskets are being replaced (vehicle
was leaking around pretty badly). I did notice some other fluid leaking,
hard to decipher where though due to the other leak. The mechanic
suggested waiting until this was fixed and "hopefully" that was it.

I have recently been hearing a noise, kind of a rattling or grinding
niose when I make a right hand turn? Any ideas?

Don't mean to butt in, but have that other leak checked before getting the valve cover job done. Reason is that I'm a new owner also, and having to have the Intake gasket changed due to a leak ( very common on this engine). To do this job, they have to take the valve covers off, thus changing the gaskets. So there's no point in getting the valve cover gaskets changed, if they're gonna have to re-do the job and get you to pay twice.

You're not butting in at all, I appreciate all the advise I can get. This is a learning experience for me, I just wish I would have gotten your reply sooner. I already had the valve cover gaskets replaced only to find out yesterday at the dealership I "need" to get my head gaskets replaced. OUCH! DiscoMike gave me some great advise on that though and I'm gonna check those things first to see the severity, or not. Thanks again.
