Default Oil Change

Hola: We are in Mexico with a 2017 Discovery 5 HSE TD6. The car is indicating service/oil change. The nearest dealer is 5 hrs driving away. I have asked them for recommendations to do it here in PV, but no replies.
Any tips? Can I postpone until we get to the US in a month and a half? (give or take 4000km/2500mi) Or just get a local oil change?

How many miles / how long since last oil change? If it's indicating for 16,000 miles (the service interval) then I would do sooner.. if it's just a year and you have lower mileage since last one I'd wait
It's an easy job for any one to do. Vacuum out and back in. But need to get the right oil and the LR spec at least for gas engines is hard to find. Not sure about diesels. You could also just do an appropriate fully synthetic then have the dealer change it when you get back.

What are the minimum specs? I saw a long post on another page, but I have little or no knowledge of oil.

I believe that is based on your forum interaction.

Mobil 1 ESP 5w-30 meets the spec
Since it is a Ford engine, the MOTORCRAFTXO5W30QFAFull Synthetic Diesel; SAE 5W-30 meets the spec

change every 7-8k ..... not 16k not 16k

The Castrol oil is only available by the barrel and or at dealers.

I hope this helps.
