Any 2"OME lift or RTE 2" should be more then enough.

Yeah, 2" is plenty. I run Goodyear G90's sometimes in 7.50x16. Needed a bit of rear fender trimming on my D1, probably not on a DII.

Why would you want to run them on your Disco, they will beat you to death and there certainly are many other sizes that will give you more traction off road?

Actually the G90's are one of the best off-road I've ever used. Sadly they suck for longevity if you run them on tarmac. But I typically run load range D or E tires. My next set will probably be another set of Cooper STT's.

Do the 7.50X16 tires fit ok on the stock Disco I 7 inch rims? I've got a set of stock steel rims that I was thinking using for some 7.50X16.

Be careful when buying any of the old 750/16 military tires, many are way to hold to be safe, check the manufacture date to be sure, if they are over 5 years old, beware.

Yeah, I understand that, I watched that video that someone posted. The tires I'm looking at aren't military, they are probably considered farm truck tires or something. They are Mastercraft/Cooper Courser Traction LT. They are tubeless bias ply, and fairly cheap. I found a spec sheet somewhere online and it said that 7 inch was the maximum rim width, but I want to make sure that that not just a little too wide. I'd hate to be getting lots of flats because the side wall it rubbing on the ground. ;-)
