The Wheel Arch Extensions are option code DF0WE. As of 2/25 it appears the availability was unknown.
The mud flaps do not appear to be a port install option. My sales rep said they had been ordering parts whenever they could. They quoted me $345.50 for the front installed and $290.00 installed for the classic mud flaps.

My dealer also says the classic mud flaps are showing up as "Exterior Protection Pack" DF007 $350 (that's for the front and rear).
The online configurator clearly doesn't show what is actually available or not. My dealer is just as frustrated as I am. I custom-ordered a Porsche last year and the configurator was not only 100% accurate, but the report showed all the correct order codes and was super-easy for the dealer to create the order.
I think I'm going to stop trying to pursue all these options and just buy everything aftermarket and install myself.
It shouldn't be this hard.

Thanks for the info. My dealer says DF0WE is coming up as "not found" in his computer system.

Most of the options are intended to be dealer installed it seems. There is the list of port installed options, and as someone else mentioned above, can be installed if they have the parts in stock. Their has been a shortage of many accessories due to COVID-19.
The order guide does indicate exterior protection pack for $350 and detailed as the classic mud flaps. I asked my sales rep about adding them and he replied (via email) that they can add them at the dealership and provided the prices I posted earlier. I took that as if they were out of stock at the port, but he did not state that so I dont know. He had told me a couple months ago alot of port install items were out of stock. Not sure if that has changed since or how up to date his info really is. Its ridiculous the dealer price installed is almost 2x the port install when you are ordering the vehicle new. They should match the price IMO. I was going to buy the mud flaps myself and see what their labor cost is but he has not gotten back to me about that.

On my 2020 110 I installed roof cross bars, classic mud flaps, wheel arch protectors, and rear bumper scuff guard. I ordered them all from Rimmer Bros and they arrived in about a week, and were less money including shipping and genuine parts.
Seems the parts are readily available in the UK.

They played it close to the vest on the '21 and told me that "orders won't go in until the March batch". When we next chatted, it turned out I was getting a '22, but we chose to update from the X-Dynamic to the XS which was very similar in terms of spec. It's a very high volume dealer, so I think they may have put us in their early allocation.
Given how long new cars are taking to be delivered we'll stick with the standard differentials. Spoke to our guy this morning and he wasn't at all concerned about it in snow and gravel roads camping without it and it sounds like you're of the same opinion! Our RRS has 225k miles on it, so I don't think we could wait in either case

Jaguar Land Rover to suspend output due to chip shortage https://www.bbc.co.uk/news/business-56841946
Does this affect Defender or are they all made in Slovakia?

"The Castle Bromwich factory makes the Jaguar XE, XF and F-Type models, and employs about 1,900 people. Halewood makes the Range Rover, Evoque and the Land Rover Discovery Sport, and has about 4,000 workers."
So I guess no?

Chip shortage
"The models affected by the temporary shutdown will be the Jaguar XE and XF executive cars and the F-Type sports car, all built at Castle Bromwich, and Halewood’s Discovery Sport and Range Rover Evoque.
Manufacturing will continue at JLR’s Solihull plant, which makes various Range Rover models plus the Jaguar F-Pace SUV. JLR’s international factories in Slovakia – where its new Defender is made – Brazil and China are as yet unaffected."
