That's part of the battery monitoring system. Unplugging prevents battery data from being sent to the ECM which then will not engage start/stop as a fail-safe.
Problem is that there are other systems involved.
On other JLR vehicles, there are better ways to do it that only turn off start/stop. I did it on an XF and an F-Pace under the dash. No idea on a Defender and I don't care bcs, to me, start/stop has been improved to the point where it doesn't bother me.
Going through the workshop manual with a search for "battery monitor" will show other systems affected by the BMS.

Agree on the stop/start - my P400 has one of the best implementations I've experienced. Much better than the stop start on my last XJ and on the BMW that I sold when I got my Defender. On the other cars the stop/start was rough, and the air conditioning would stop working while the engine wasn't running. With the Defender, it's unobtrusive.

I remember in one of the Jags that there was a 3 or 4 wire plug that connects to a module next to the fuse panel. This wire supplies power to the start/stop system.
Unplugging it throws an error when the car is started. Something like "start/stop not available" but that clears and no other systems are impacted.
No idea if the Defender has a similar set-up but it would be in the good book if it does. Just have to find it.
