216ci turbo diesel four cylinder being a tease, not enough studs around.

If you look at the two triangulated bridged castings on the right side of head pic there are three bolts per, should be two on the outer edge (far right) and one stud in the center of each. Bolts work in solid block bores but they will not work with a thin block deck, large cooling cavity below. Fail. Rebuilt engine lasted six years but had cooling problems on and off with it before it came to me. Now I know and it will be fixed. The head gasket failed but if you din't know what you where looking for you'd have missed it. Being a turbo it's forcing at times higher compression than the 16:1 when it's not spooling. Failed at the fire ring, went under it directly to the bolt, through the threads and into the cooling system. Very small trace across the top of the sleeve, doesn't take much to overcome a 10lbs radiator cap spring.

Are most of you who do your own head gaskets, changing out the manifold bolts and the head bolts, along with the valve cover bolts? What about valve springs and oil seals and rocker bolts?

Yes, never re-use head bolts.

Manifold bolts get cleaned and evaluated, sometimes they get changed out.

Valve cover bolts usually stay, sometimes I will replace them with a 6pt.

Valve springs stay unless they look worn or have cracks.
Rocker bolts stay as well (unsure if this is best practice)
