since I'm going to have to drain and refill, which coolant should I use?
If you don't want to replace your head gaskets even more frequently at $2400 a time at the dealer then use what Rover says to use, DexCool. Now that is not to say you can't add some of the coolant suppliments on the market, like Royal Purple, but NO yellow or green coolant PERIOD.

From what I understand the yellow coolant is replacing
the Dex-cool.
From what I have read, they used the yellow in a few models before fully changing to Dexcool. It has been around a lot longer.

May have been around alot longer, and personally I don't care if people don't want to run what is called for cause all they are doing is risking head gasket failure and I know how much shops like to see engines come in after using some other coolant and now it needs head gaskets.
Like the old saying goes, you can lead a dog to water but you can't make him drink.

Is there any benefit to adding water wetter, etc with new DexCool?

Sure, just make sure whatever you run is compatible with Dexcool. I threw some Purple Ice in with mine...

Unless your coolant is discolored, just flush with water.
