I remember reading somewhere that LR switched from a brass radiator fill plug to a plastic one - so does it mean that my '03 radiator fill plug is the same as the diff fill plugs?

What it means is if you are going to keep that vehicle and don't want to experience a cracked/broken plastic plu, the by a new brass plug for each diff.
Your 03 radiator do not have any fill plugs, like the D1 radiators had.
